Where do your truffles come from?

From our truffle groves in Drôme Provençale. Every truffle is unearthed on site at full maturity.

Are they genuinely fresh?

Harvested at maturity, our truffles are sorted and brushed by hand. The available selection depends on the week’s harvest.

How long can I keep a truffle?

Ideally, use it within three to four days of delivery. Place it in a clean food container with absorbent paper changed daily, in the coldest part of the refrigerator between 0 and 4°C. Check for condensation every day and wash the truffle only when you are ready to use it.

How can I buy your truffles?

Truffles are collected by appointment in Drôme provençale. We do not ship truffles. Prices vary weekly with the market and the harvest. Contact us for availability and the current price before your visit.

Which size should I choose?

Allow around 5 g of truffle per guest for one course, or 10 g for a main course.

What is the difference between Tuber melanosporum and Tuber brumale?

They are two distinct species whose seasons can overlap. An experienced eye distinguishes them by the cut surface, veining, texture and aroma. The House identifies them separately and adapts its cooking advice to each species.

Do you recommend wine pairings?

Yes. The Pairings page presents one House red and one House white and explains which to choose with eggs, risotto, poultry and different sauces. The names L'Automne, Résonance and Le Trésor de Fripon tell the stories behind the labels; they are not presented as three distinct wine profiles when the wine itself is the same.

How do I pay?

The amount and payment methods are confirmed directly with the House before your visit.

Do you supply restaurants?

Yes. Volumes, schedules and net-of-tax invoicing are agreed directly. See the Chefs page.
