Ask for the species, origin, net weight and storage guidance for the offered batch. Price the quantity suited to your recipe. A large piece is not essential if you intend to chop it. When comparing sellers, record the same information for each offer, including collection or transport arrangements.
Combine a market visit and truffle hunting
The market lets you talk and buy; hunting shows how dogs search in the grove. Book the workshop separately and check travel and timings if you want both. Also plan how to store purchases during the day. A market visit does not automatically include a workshop or tasting.
