Why does the pairing work?

Some Grenache-led Côtes-du-Rhône wines offer ripe fruit, spice and a rounded texture. Served at the right temperature and chosen for the recipe, these qualities can accompany the earthy aromas of Tuber melanosporum without overwhelming them.

Choose for the plate

  1. Eggs, cream and delicate dishes: choose a House white, served cool but not ice-cold.
  2. Risotto, Parmesan or roast poultry: choose a supple red served at around 16°C.
  3. Avoid heavily oaked, overly warm or very tannic wines, which would dominate the truffle aroma.
