Why does the pairing work?
Some Grenache-led Côtes-du-Rhône wines offer ripe fruit, spice and a rounded texture. Served at the right temperature and chosen for the recipe, these qualities can accompany the earthy aromas of Tuber melanosporum without overwhelming them.
Choose for the plate
- Eggs, cream and delicate dishes: choose a House white, served cool but not ice-cold.
- Risotto, Parmesan or roast poultry: choose a supple red served at around 16°C.
- Avoid heavily oaked, overly warm or very tannic wines, which would dominate the truffle aroma.
