Which dish should you start with?

For a first truffle, keep to a simple dish you cook confidently: soft eggs, buttered pasta or risotto. You can focus on aroma and service instead of learning a difficult cooking method at the same time. Decide on the finish too: grating, chopping and presenting slices do not call for the same shape of piece.

Calculate the amount before buying

For four people, our egg recipe uses 20 g, risotto 30 to 40 g and poultry 30 g. These amounts belong to those specific recipes. Scale them to your guest count and add requirements if several courses contain truffle. The calculator explains the amounts; offered weights depend on available pieces.

Plan buying and storage

State your meal date when requesting a selection. On receiving it, follow the product's instructions and store it promptly as recommended. If the meal is much later, do not choose the buying date for convenience alone. Ask for options suited to your schedule and read the storage guide.

Plan the finishing touches

The finish happens when the dish is ready to leave the kitchen. Our recipes add truffle near the end or off the heat: have the knife or grater, plates and portions ready beforehand. For several guests, divide the intended weight between plates rather than judging by eye until the last one. Then serve without leaving the first portion waiting while the others are finished.

Choose wine to suit the dish

Pairing also depends on sauce, texture and other ingredients. Compare options for the complete dish. Our pairing guide suggests directions for eggs, creamy preparations and poultry. Wines from our selection of old vines in the Drôme can be discovered at workshops; bottles are offered separately according to availability, with an alcohol-free tasting alternative.

Prepare your truffle enquiry

Send the dish, guest count, date and intended budget. We consider a suitable quantity and batch by quotation, subject to the harvest. Confirm weight, total cost and receipt arrangements before fixing your menu. Detailed recipes and ingredients are linked below.
