From the Hunt to the Presentation Case: Brushing, Grading, Sorting
Harvested at maturity, our truffles are sorted and brushed by hand. The available selection depends on the week’s harvest.

Six steps, in order
- Harvest only mature truffles marked by the dog.
- Brush each specimen carefully without washing it before storage.
- Sort and remove truffles that do not meet the House quality criteria.
- Grade each specimen to offer a weight suited to every table.
- Keep the truffles fresh until collection.
- Truffles are collected by appointment in Drôme provençale. We do not ship truffles.
