Buying black truffles: season, quality, prices and choosing well
Before buying, ask for the species, origin, net weight, product condition and total price. For fresh Tuber melanosporum, your planned cooking date helps determine the quantity.

Identify the product
A fresh truffle, a jar of pieces and a flavoured preparation are different purchases. Check the species and, for preparations, the ingredients. Tuber melanosporum identifies the black truffle also known as the Périgord truffle.
Ask whether the price is for a net weight, one piece or a pack. An illustrative photograph does not guarantee the weight or origin of the item supplied.
Choose for your intended use
At collection, ask to inspect the truffle: appearance, firmness, aroma and general condition should match the description. A whole truffle suits attractive slices; pieces can suit grating if offered and properly identified.
Explain the dish and number of portions and ask for a suitable quantity. Buying more than you can use promptly offers no benefit for a delicate fresh product.
Cheap truffles: compare like with like
Compare the same species, storage condition and net weight. A small size lowers the purchase total without proving a lower price per gram. A truffle preparation is not an equal-quantity replacement for a fresh truffle.

Storage and cooking after purchase

Plan for price and availability
House truffle sales start at €1,200/kg, subject to availability, with a €50 minimum truffle order. Delivery is paid by the buyer. At this starting rate, 50 g costs €60 excluding delivery. Choose a market, online enquiry or workshop
You can enquire online, meet us at Saint-Paul-Trois-Châteaux market on a confirmed date or discover hunting in a workshop. State your meal date and intended use for each route.
